Something happy to brighten up your Monday

I find Greek Mythology an incredibly interesting subject and am doing my best to read up on all the legends, myths and stories. There's a quote I found which I find to be absoutely lovely. It's only a short one but the theory behind it is, quite frankly, adorable.

It was originally written in Plato's Symposium (a document about love and philosophy)

"According to Greek mythology, humans were first created with two heads, two hearts, four arms and four legs. Zeus was frightened of these humans as he feared their power and because of this, he decided to split them in half.

Each 'half' human was thus condemned to spend their lives finding their other halves."

I find this fascinating, although subtly morbid. In my eyes, the humans weren't "condemned" to find their other half; to me it just makes things into a romantic adventure, trying to find your one true love.

Summer skin!

Now that summer has finally arrived and Britain is finally heating up, we're all going to be showing that extra bit of skin. To help banish any dry, dehydrated winter skin and turn it into healthy, moisterised and ready to show off, I've found this perfect recipe to help!

Papaya, Shrimp and Soba Salad

This recipe is filled with vitamin C which is found in papayas, peppers, fresh herbs, leafy greens, oranges and tomatoes. Vitamin C is a fantastic source of antioxidants, which strengthens the skin tissue and helps the skin to repair itself.

Ingredients

  • Coarse salt and ground pepper
  • 8 ounces soba noodles
  • 1/3 cup tamarind concentrate
  • 2 tablespoons light-brown sugar
  • 1/4 cup light olive oil
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon cayenne pepper
  • 1 cup fresh cilantro leaves, plus more for garnish
  • 1 small red onion, halved and thinly sliced
  • 1 papaya (about 1 pound), peeled, seeds removed, quartered lengthwise, and thinly sliced crosswise
  • 1/2 cup salted peanuts, coarsely chopped
  • 3 cloves garlic, thinly sliced
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon ground coriander

Instructions

1. In a large pot of salted, boiling water cook the soba noodles until al dente (firm, not hard), as instructed on the packaging

2. Whilst they're cooking, in a large bowl, whisk together the tamarind, sugar, 2 tablespoons oil, lime juice and cayenne.

3. Drain the noodles, cilantro, cilantro, onion, half the papaya, and add it all together. Season with salt and pepper and toss to combine.

4. In a large wok/frying pan, heat the remaining 2 tablespoons of oil over a low heat. Add the garlic and cook until golden brown on both sides. Remove the garlic chips and set aside on a paper towel.

5. Raise the heat to medium-high and add the shrimp. Sprinkle with coriander, salt and pepper. Cook, tossing occasionally until the shrimps are just cooked through. This will take about 3minutes.

6. To serve, divide noodles and shrimp equally into bowls and top each serving with remaining papaya, peanuts, garlic chips, and cilantro.

Prinknash Abbey Incense

Since 1906, the Benedictine Monks of Prinknash Abbey have been blending incense and are now one of the oldest and most popular incense blenders in Europe. Spending decades perfecting their incense recipe to make it one of the best.

Prinknash Abbey

The main ingredient used in this incense is the purest Arabian frankincense. It is then blended with precious aromatic oils and divine spices to create unique and superior recipes for a variety of incenses. The incense is blended to a secret recipe that, when burning, ensures a sweet odour is released, instead of the smell of burning.

One of the monks blending incense

Prinknash Incense comes in six varieties and has markets all over the world. When using the incense, place a charcoal disk on a fire and heat proof dish and light with a match. It will start to ember like the end of an incense stick. When the disk is heating, add a small spoonful of the incense granules to the top of the disk. The embers will help fuel and burn the granules.

This incense is mainly burned in cathedrals and churches however it's also very popular to burn in the home as a sweet fragrance or in space and energy clearing sessions.

The names below are of the incense that come in packs for home use; these packs include a bag of incense granules and some charcoal disks.
